Anandi Vaithialingam

Running the Kottakarai Organic Food Processing Unit at Auroville for the past 23 years enabled Anandi to discover her conscious and unconscious interest in searching a diet style which uplifts spiritual development while respecting all the creatures of this Planet.  This quest exposed her to try raw, vegan food. She began to experience uplifted physical energy, improved mental clarity, increased equanimity, supporting her intention of seeing The Divine in all, deepened feeling of gratitude and the list is long. Although born vegetarian, she gave herself a few years to gradually giving up the long rooted habit of eating cooked food simultaneously strengthening her spiritual practices.
